Spek- of kruidenbrood
Totale bereidingstijd: 105-130 minuten
2 broden
Ingrediënten
1 blokje gist (42 g)
250 ml water, lauw
250 g tarwemeel, type 405
250 g tarwevolkorenmeel
1 theelepel suiker
2 theelepels zout
1/2 theelepel peper
3 eetlepels olie
150 g bacon, in kleine blokjes of tel

kens 3 eetlepels peterselie, dille en
bieslook (gehakt)
Voor het bestrijken
melk
Bereiding
Los de gist al roerend in lauw water op.
Voeg de meelsoorten, de suiker, het
zout, de peper en de olie toe en kneed
het geheel gedurende 3–4 minuten tot-
dat er een gladde deegmassa ontstaat.
Laat het deeg afgedekt in de oven 40-
50 minuten rijzen (ovenfunctie "Boven-
Onderwarmte", temperatuur 35 °C).
Kneed het bacon of de kruiden door
het deeg. Maak van het deeg twee ca.
35 cm lange broden en leg deze op
een bakplaat of een geperforeerde
gourmet-bakplaat. Snijd de broden
schuin in en laat deze in de oven 15-20
minuten rijzen (ovenfunctie "Boven-On
-
derwarmte", temperatuur 35 °C).
Bestrijk de broden met melk en bak ze
vervolgens in de oven goudbruin.
