Rundvlees met sesam
Ingrediënten voor 4 personen:
¼ kopje sesamzaad
½ kg rundvlees (filet of steak)
⅓ kopje Shanghai saus, scherp
1 eetlepel zetmeel/allesbinder
2 eetlepels gember- en knoflookolie
5 kopjes kool, in stroken gesneden
3 eetlepels water
2 theelepels sesamolie
Sesamzaad ca. 3 min. licht roosteren en apart leggen (pas op dat het niet aanbrand).
Vlees tegendraads in grote stukken snijden en dan nogmaals met de draad mee in
fijne reepjes snijden. Zetmeel met wat water vermengen.
Vlees met mengsel van zetmeel en Shanghai saus insmeren.
Olie in de wok verhitten. Kool en water toevoegen, alles doorroeren en afgedekt
2 min. laten koken. De inhoud compleet met vocht in een schaal gieten.
Wok met keukenpapier schoonwrijven en weer op het vuur zetten. Een eetlepel olie
verhitten en vlees 2-3 min. daarin braden. Sesamolie en de helft van het sesamzaad
toevoegen en door elkaar roeren.
Op een bord serveren met de rest van het sesamzaad en de kool.
Varkensvlees zoet-zuur
Ingrediënten voor 2 personen:
250 g varkensfilet Zout, zwarte peper, vers gemalen
1 klein ei
1 eetlepel maïsmeel
2 eetlepel sesamolie
1 kleine ui
½ rode paprika, in reepjes geschnitten
1 wortel, in reepjes
⅛ l groentebouillon
1 eetlepel tomatenpuree
1-2 eetlepel sojasaus
2 shijven ananas uit blik, in blokjes gesneden
1-2 eetlepel vruchtenazijn
