Mosterdolie: van witte of zwarte zaden. Naar gelang herkomst scherper
van smaak.
Sojaolie: zeer veel gebruikt, mild van smaak. Voor zeer hoge tempera-
turen geschikt.
Anatto olie: rode olie, dat gebruikt wordt levensmiddelen te kleuren.
De kleur komt van de kruiden en zaden, die aan de olie
toegevoegd zijn.
Palmolie: uit de vruchten van de palm, geschikt om in te frituren.
Recepten
Voorjaarswraps
Ingrediënten voor 4 personen:
300 g in stukjes gesneden geschilde garnalenstaartjes
10 stuks bladerdeeg
50 g mihoen
2 eetlepels notenolie
2 teentjes knoflook, fijn gehakt
2 lente-uitjes, in dunne schijven
50 g wortels, in blokjes gesneden
100 g verse mungobonen
50 g selderijstangen, in dunnen stroken
½ theelepel zout
2 eetlepels vissaus
1 eetlepel oestersaus
½ theelepel chilischillen, gehakt
1 theelepel koriander, gehakt
1 eiwit, geklopt
Bladerdeeg openvouwen. Mihoen ca. 15 min. in lauwwarm water laten weken,
vervolgens in 5 cm lange stukken snijden. Een eetlepel olie verhitten, knoflook,
lente-uitjes en groente op hoog vuur 2 tot 3 min. aanbraden, daarbij constant
roeren. Alles uit de wok halen en warm houden.
De overige olie verhitten en garnalenstaartjes ca. 1 min. braden. Groente en mihoen
er doormengen, zout, sauzen en kruiden toevoegen.
Bladerdeeg open leggen. Van de vulling ongeveer twee eetlepels in het midden
plaatsen. Randen omslaan en opvouwen. Aan het eind met eiwit bestrijken.
In hete olie frituren.
