Ingrediënten
40 g boter
40 g bloem
375 ml melk
100 g gruyère
3 eieren
zout
peper

Bereiding
Laat de boter in de pan smelten en
voeg de bloem toe. Voeg al roerend en
opkokend de melk toe (300 ml). Bereid
zo een zeer dikke béchamelsaus
Breng de rest van de melk aan de kook.
Voeg de béchamelsaus toe en laat het
geheel een paar minuten indikken (al
roerend).
Voeg de geraspte gruyère toe.
Scheid de dooiers en het eiwit van de
eieren. Meng de dooiers door de iets
afgekoelde massa en voeg zout en pe‐
per toe. Klop het eiwit stijf en meng ook
het eiwit door de massa.
Vet de soufflévorm de vormpjes in. Ver‐
deel de massa. Plaats de vorm of de
vormpjes op de universele bakplaat vul
ca. 1 l water (in een 90 cm toestel: ca. 2
l) in de universele bakplaat.
