Stokvisbrandade
Totale bereidingstijd: 40-50 minuten (+ 24 uur in water)
voor 6 porties
Ingrediënten
1000 g stokvis
250 ml melk
600-700 ml olijfolie
zout
peper

Bereiding
Leg de stokvis ca. 24 uur in water. Ver‐
vang het water meermaals. Snijd de vis
in grote stukken en laat het vlees ca. 8
minuten zachtjes koken in de kookpot
met water. Haal de vis uit de pan, laat
het vlees uitdruppelen en iets afkoelen.
Verwijder de huid en de graten.
Verhit in een platte pan 200 ml olijfolie.
Doe de vis erbij en roer deze om met
een houten lepel, totdat de massa fijn
en goed verdeeld is. Kies een lage ver‐
mogensstand.
Haal de pan van de kookzone. Voeg al
roerend 400-500 ml olijfolie toe en ver‐
volgens 250 ml kokende melk. Voeg
zout en peper toe. Het mengsel moet
heerlijk zacht zijn.
Doe het mengsel (brandade) in de vuur‐
vaste vorm en plaats deze in de oven.
