Totale bereidingstijd: 130 minuten

Ingrediënten
2 eetlepel olie
1 tomaat, gehakt
1 ui, fijngehakt
4 teentjes knoflook, fijngehakt
80 g wortels, in blokjes
80 g selderie, in blokjes
50 g prei, in ringen
1 eetlepels tomatenpuree
6 schijven kalfsschenkel (à 200–250 g)
zout
peper, vers gemalen
bloem
50 g boterolie
200 ml witte wijn
800 ml runderbouillon
1 eetlepel vleesjus-pasta
telkens 1 bosje rozemarijn, salie en tijm
geraspte schil schil van 1 citroen
Voor het bestrooien
1 eetlepel gehakte peterselie

Gourmet-pan met deksel
Bereiding
Verwarm de Gourmet-pan in de oven
10 minuten voor.
Hak de ui en het knoflookteentje fijn.
Maak blokjes van de tomaat, de wortel
en de selderie.
Doe olie in de gourmet-braadpan. Voeg
de groente en de tomatenpuree toe.
Fruit het geheel gedurende 10 minuten.
Kruid de schijven kalfsschenkel met
zout en peper. Wentel het vlees in
bloem en braad het vlees (beide kanten)
gedurende 3–4 minuten op de kook‐
plaat aan.
Doe het vlees, de witte wijn, de runder‐
bouillon, de vleesjus-pasta en de krui‐
den bij de groente in de gourmet-
braadpan. Laat het vlees met deksel
nog eens 90 minuten smoren.
Serveer het vlees met saus, geraspte
citroenschil en gehakte peterselie.
