Amandelmakronen
Totale bereidingstijd: 35 minuten
voor 30–35 stuks
Ingrediënten
100 g bittere amandelen
200 g zoete amandelen
600 g suiker
3 à 4 eiwitten (grootte M)
zout

Bereiding
Draai de amandelen in twee stappen
samen met 150 g suiker fijn in de keu‐
kenmachine.
Meng de resterende suiker, wat zout en
eiwit door elkaar tot een taaivloeibaar
deeg ontstaat.
Spuit met behulp van een spuitzak met
gladde tuit het deeg als kogeltjes op de
met bakpapier beklede bakplaat.
Strijk de deegkogeltjes plat met behulp
van een bevochtigde rugzijde van een
lepel. Bak ze daarna goudbruin.
Laat de amandelmakronen op het bak‐
papier afkoelen en neem ze dan los.
