"Sablés de Noël"
Totale bereidingstijd: ca. 20 minuten
voor 30 stuks
Ingrediënten
200 g boter
300 g bloem
100 g poedersuiker
1 pakje vanillesuiker
2 eidooiers
100 amandelen, gepeld en gemalen
geraspte schil van ¹/₂ citroen
Vulling:
200 g rode bessengelei

Bereiding
Snijd de boter in blokjes en kneed het
geheel met bloem, poedersuiker, vanil‐
lesuiker, eidooiers, amandelen en ci‐
troenschil totdat er een gladde deeg‐
massa ontstaat. Doe het deeg in een
folie en zet het vervolgens 30 minuten
in de koelkast.
Rol het deeg uit tot het ongeveer 2 mm
dik is. Steek er deegcirkels uit. Steek bij
de helft van de deegschijven in het mid‐
den een gaatje uit (steek bij grotere
schijven drie gaatjes uit).
Leg de deegcirkels op de bakplaat. Bak
ze helder geel in een voorverwarmde
oven. Neem ze eruit en laat ze afkoelen.
Bestrijk de lauwwarme koekjes zonder
gaten in rode bessengelei, die u eerst
even opwarmt. Leg de koekjes met de
gaatjes er bovenop. Bestrooi het geheel
met poedersuiker.
