4. SÉLECTION DU NIVEAU DE PRESSION.
4.1 Position pour l’extraction et le montage de
la soupape pour son entretien.
Avant de passer à cette position, s’assurer qu’il ne reste
plus de pression à l’intérieur de la cocotte, en situant la
soupape en position de décompression (voir II.4.2.).
4.2 Position pour l’extraction de toute la
pression accumulée à l’intérieur de la
cocotte une fois la cuisson achevée.
4.3 Niveau de pression moyen. Les temps de
cuisson sont un peu plus élevés que sur
la position 2. À utiliser pour la cuisson de
soupes, poissons, desserts, etc.
4.4 Niveau de pression élevé. Les temps de
cuissons ont un peu plus courts. À utiliser
pour la cuisson de viandes, légumes secs,
pâtes, etc.
