Viennese hot chocolate
For the chocolate:
200g dark chocolate
800g milk
200g thick cream
For the whipped cream:
125g 30 to 35% fat liquid crème
fraîche (put in the refrigerator for 3h

THE CHEF's TIP
If you do not have confectioners' sugar, start by putting powdered sugar in the
Compact Cook bowl with the 4-blade knife. Mix the sugar for 30 seconds at speed 10.
Insert the whisk into the bowl. Then, add the liquid crème fraîche and the
mascarpone, and start program 20 (EMULSIFYING) after having set the running time to 4
minutes.
If you prefer a classic chantilly cream recipe over the mascarpone recipe, see recipe P71.
Make biscuit chips and crumbs with your favorite biscuits with the CHOP mode and
sprinkle them over the chantilly cream for the gourmet touch.
- If possible, put the Compact Cook
bowl and the whisk in the fridge at least
1h prior to getting started with the recipe
for a better result.
- Weigh the ingredients
- Place the whisk inside the Compact
Cook bowl
- Pour the cold liquid crème fraîche and
the mascarpone into the bowl and start
program 20 (EMULSIFYING)
- Stir the confectioners' sugar and the
vanilla beans in and restart program 20
(EMULSIFYING) after having set the
time to 1 minute.
- Put in the refrigerator
For the hot chocolate:
For the whipped cream:
- Place the 4-blade knife inside the
Compact Cook bowl add the ingredients
and start program 18 (MELTING)
- Once the program is over, set the
Compact Cook manually on 80°C at
speed 2 for 4 minutes.
Presentation:
- Pour the chocolate in a large cup and
top it with the whipped cream
