Čerstvé klobásky
Suroviny:
300 g chudého hovädzieho mäsa
500 g chudého bravčového mäsa
200 g slaniny z pliecka
20 g soli
1/2 PL mletého bieleho korenia
1 ČL rasce
1/2 ČL muškátového orieška
Hovädzie mäso, bravčové mäso a slaninu dvakrát pomelieme v mlynčeku na mäso.
Pridáme zmiešané korenie a soľ, a 5 minút miesime.
Náplň uložíme do chladničky asi na 30 minút. Naplníme klobásovú plnku podľa
návodu (pozri kapitola „Spracovanie klobás“) a vyrobíme klobásky o dĺžke asi
25 cm.
Hotové klobásky dobre prepečieme a ešte v ten istý deň zjeme.
Lisované pečivo
Suroviny:
500 g masla
500 g cukru
2 3 balíčky vanilkového cukru
1 balíček vanilkového pudingu
1/4 ČL soli
1 vajce
4 žĺtka
800 g múky (typ 405)
2 ČL prášku do pečiva
200 g mletých mandlí (blanšírované)
postrúhaná kôrka z jedného citróna
Maslo vymiešame do peny. Postupne pridávame zvyšné suroviny a cesto dobre
premiesime. Hotové cesto necháme ca. 12 hodín (napr. cez noc) odležať prikryté
v chladničke. Potom ho pretlačíme cez mlynček na mäso s nasadeným nástavcom
na lisované pečivo 1. Plech na pečenie vyložíme papierom na pečenie a naň
poukladáme lisované koláčiky. Rúru predhrejeme na 180 °C a koláčiky v nej
pečieme asi 10 –15 minút do zlatožlta.
