Rührei Toast
100 g Lachsschinken
4 Scheiben Toast
3 Eier
4 Salatblätter
2 Tomaten
1 Zwiebel
6 TL Butter
1 TL Senf
1 EL Schnittlauch
Pfeffer, Salz
Schneiden Sie den Schinken in feine Steifen. Waschen Sie die Tomaten und
entfernen Sie die grünen Stielansätze. Schneiden Sie die Tomaten in Scheiben.
Waschen Sie die Salatblätter. Schälen Sie die Zwiebel und zerreiben sie fein.
Rösten Sie die Toastscheiben leicht an.
Schlagen Sie die Eier in eine Schüssel und verquirlen sie, Salz, Pfeffer und
Schinken untermischen. In den Pfännchen etwas Butter bei schwacher
Hitze zerlassen und die Eier zugießen. Nehmen Sie das Rührei aus den Pfännchen,
solange es noch cremig ist.
Bestreichen Sie die Toasts mit der restlichen Butter und Senf.
Legen Sie die Salatblätter und die Tomatenscheiben darauf. Verteilen Sie die
Zwiebel auf die Toasts. Belegen Sie nun alles mit dem Rührei. Die Toasts mit
Schnittlauch bestreuen und genießen.
