. PÂSTELLA PER TORTILLAS
Per 6 persone (preparazione 15 min ;
riposo 1 h)
125 g di farina di grano
125 g di farina di granoturco
10 g di sale
3 cucchiai d’olio di oliva
350 ml d’acqua
- Mescolate tutti gli ingredienti per ottenere
una pasta liscia ed omogenea come una
pastella (utilizzate un mixer o uno sbattitore
elettrico : il lavoro sarà rapido e la pasta
senza grumi.)
- Mettete la pastella cosi ottenuta in un
contenitore e lasciate riposare in frigo per 1
ora.
- Versate il corrispondente di una dose di
pastella in ogni stampino di cottura e fate
cuocere per circa 1 min 30 per lato.
* Se non trovate la farina di granoturco,
utilizzate quella di grano.
. PANCAKES
(per circa 12 pancakes)
125 g di farina
1/2 cucchiaino di zucchero
1/2 cucchiaino di sale
1 cucchiaino di bicarbonato
3/4 di cucchiaino di lievito
1 uovo
30 g di burro fuso
25 cl di latte
30/45 g di burro fuso per la cottura
- Preparate la pasta con gli ingredienti sopra
descritti ed aggiungete il lievito ed il
bicarbonato.
- Lasciate riposare il composto per 30 min ;
se risulta troppo spessa, aggiungete un poco
di latte.
- Versate il corrispondente di due dosi di
pastella in ogni stampino di cottura.
- Quando il pancake si stacca dalla placca,
giratelo con la spatola (circa 2 min per lato)
. Variante
Pancakes ai mirtilli : aggiungete 200 g de
mirtilli freschi, prima di cuocere.
Servite con sciroppo d’acero.
