Shepherd's Pie
Totale bereidingstijd: 100 minuten
voor 6-8 porties
Ingrediënten
25 g boter
2 uien
2 wortels
2 stelen selderij
1000 g lamsgehakt
¹/₂ theelepel verse tijm
¹/₂ theelepel verse rozemarijn
1¹/₂ theelepel tomatenpuree
200 ml rode wijn
1 eetlepels bloem
250 ml kippenbouillon
1 eetlepel worcestershire-saus
zout
peper
1500 g kruimige aardappelen
25 g boter
5 eetlepels melk
Accessoires

Bereiding
Hak de uien, de tijm en de rozemarijn
fijn. Snijd de wortels en de aardappelen
in kleine blokjes en de selderij in kleine
stukjes.
Fruit de uien in 2–3 minuten in boter op
de kookplaat. Voeg de wortels en de
selderij toe en stoof het geheel gedu‐
rende nog eens 8–10 minuten. Voeg het
gehakt toe en braad het vlees (af en toe
keren). Giet het vet weg. Voeg de tijm,
de rozemarijn, de tomatenpuree en de
rode wijn toe.
Laat de saus op een gemiddelde ver‐
mogensstand tot ongeveer 1/4 van de
hoeveelheid indikken. Voeg de bloem
voorzichtig toe en laat het geheel nog
eens 2–3 minuten zachtjes doorkoken.
Voeg de kippenbouillon en de worces‐
tershire-saus toe en laat alles 45–50 mi‐
nuten zachtjes koken. Breng het geheel
met zout en peper op smaak. Kook in
de tussentijd de aardappelen. Maak
hiermee en met de boter en de melk
aardappelpuree.
Doe het gehaktmengsel in de oven‐
schaal. Verdeel de aardappelpuree ero‐
ver en bak het gerecht in de voorver‐
warmde oven goudbruin.
