Kaassoufflé
Totale bereidingstijd: 60-65 minuten

Ingrediënten
20 g boter
30 g meel
200 ml hete melk
zout
peper, vers gemalen
1 snufje nootmuskaat, gemalen
1 snufje cayennepeper
4 eidooiers
120 g geraspte kaas (bijvoorbeeld
gruyèrekaas)
4 eiwitten
paneermeel
2 eetlepels Parmezaanse kaas, geraspt
8 vormpjes
Bereiding
Laat boter in een pan smelten en voeg
het meel al roerend toe (niet bruin laten
worden). Voeg de melk toe. Al roerend
ca. 5 minuten zachtjes laten koken.
Voeg zout, peper, nootmuskaat en cay
-
ennepeper toe.
Roer geleidelijk de eidooiers erdoor
-
heen. Voeg ten slotte de kaas toe.
Klop het eiwit stijf en roer het voorzich
-
tig door de afgekoelde massa.
Doe het deeg in de ingevette en met
paneermeel bestrooide vormpjes. Vul
de vormpjes tot maximaal 1 cm onder
de rand. Bestrooi de soufflé met Parme
-
zaanse kaas.
Plaats de vormpjes op een universele
bakplaat. Plaats het geheel in de voor
-
verwarmde oven en voer de stoom
-
injectie meteen uit.
