Totale bereidingstijd: 60 minuten, plus 3-4 uur marineren

Ingrediënten
1500 g varkensvlees (nekstuk)
3-4 knoflookteentjes
2 walnootgrote stukjes gember
3 theelepels zout
3 eetlepels sojasaus
3 eetlepels honing
2 eetlepels sherry
1 theelepel vijf-kruiden-poeder (Five
Spice)
2 eetlepels Hoi Sin-saus
sambal oelek
Bereiding
Hak de knoflookteentjes fijn. Schil en
rasp de gember. Meng alles met het
zout, de sojasaus, de honing, de sher-
ry, de Five Spice en de Hoi Sin-saus.
Maak de marinade lekker pittig met
sambal oelek.
Snijd het vlees in ca. 3 cm dikke plak
-
ken en leg deze in een goed afsluitbare
schaal. Giet de marinade over het vlees
en sluit de schaal goed af. Laat de ma
-
rinade 3-4 uur intrekken (in de koel
-
kast). Keer het vlees af en toe om.
Haal het vlees uit de marinade en leg
het op een rooster met eronder de uni
-
versele bakplaat. Doe het vlees in de
voorverwarmde oven en voer meteen
de stoominjectie uit.
