Zubereitungszeit 70–80 Minuten

Zutaten
2 Lachsforellen (à 600–700 g)
Saft von 1 Zitrone
Salz
2 Schalotten
2 Knoblauchzehen
50 g kleine Kapern
1 Eigelb
2 EL Olivenöl
2 Scheiben Toastbrot
Chilipulver
Pfeffer, frisch gemahlen
Zubereitung
Lachsforellen waschen, trockentupfen,
mit Zitronensaft beträufeln und innen
und außen salzen.
Schalotten und Knoblauch schälen und
fein würfeln. Toastbrot ebenfalls fein
würfeln. Kapern, Eigelb, Schalotten,
Knoblauch, Öl und Brot vermischen
und mit Salz, Pfeffer und Chilipulver
würzen.
Die Forellen mit dieser Masse füllen
und die Öffnung mit kleinen Holzspie
-
ßen verschließen.
Forellen auf ein Universalblech legen
und im Backofen garen.
