Zoete kersensoufflé
Totale bereidingstijd: 40–50 minuten
voor 8 porties
Ingrediënten
boter
50 g gemalen noten
200 g zure kersen
2 eidooiers
80 g poedersuiker
merg van een vanillestokje
250 g kwark
20 g maïzena
2 eiwitten
Voor het bestrooien
40 g poedersuiker
Accessoires
8 vormpjes 7-8 cm
universele bakplaat
Bereiding
Vet de vormpjes met boter in en strooi
de nootjes erin.
Laat de zure kersen goed uitlekken en
verdeel ze over de vormpjes.
Roer de eidooiers met 60 g poedersui‐
ker totdat de massa gaat schuimen.
Roer de vanille, de kwark en het zet‐
meel erdoor. Klop het eiwit met de res‐
terende poedersuiker stijf en roer het
door de massa.
Doe de massa in de 8 vormpjes. Zet
deze op een universele bakplaat en
schuif deze in de voorverwarmde oven.
Doe ca. 1 l warm water (90 cm toestel:
ca. 2 l) in de universele bakplaat en be‐
reid de soufflés in het waterbad.
Bestrooi het product voor het opdienen
met poedersuiker.
