1.Die ungeschälten Beten in kochen-
des Salzwasser geben und ca. 20 - 25
Minuten kochen.*
2. Die Beten und die Birne schälen und
mit dem Graef - Allesschneider (Schnitt-
stärke ca. 2,0 mm) in feine Scheiben
schneiden.
3. Die Walnusskerne im Backofen bei
150 °C (Umluft) ca. 5 - 10 Minuten
rösten. Dabei regelmäßig ihre Farbe
prüfen, um ein Anbrennen zu vermei-
den. Sobald sich Röstaromen entwick-
eln, die Walnüsse aus dem Ofen
nehmen und in einer Schüssel zur
Seite stellen.
4. Die Zwiebel schälen und in feine
Würfel schneiden, Kapern fein hacken.
5. Walnussöl, Olivenöl, Balsamessig,
Zitronensaft und Honig zu einer Emul-
sion vermengen und einen Schuss Was-
ser hinzugeben. Nochmals verrühren.
Die gewürfelte Zwiebel und die fein ge-
hackten Kapern hinzugeben. Einen Ess-
löffel der Vinaigrette zur Seite stellen.

Ziegenkäse und Kapernvinaigrette
6. Die Vinaigrette über die Beten geben
und vorsichtig vermengen. Anschlie-
ßend 15 Minuten durchziehen lassen.
7. Rucola in eine kleine Schüssel geben
und mit dem zur Seite gestellten Esslöf-
fel Vinaigrette durchmischen.
8. Den Ziegenkäse im vorgeheizten
Backofen bei 225 °C (Umluft) 6 - 8
Minuten goldbraun backen.
9. Beten- und Birnenscheiben auf
einem Teller kreisförmig auslegen.
Ziegenkäse darauf platzieren. Mit
gerösteten Walnusskernen und
Rucola garnieren.
* Wer es knackiger mag, kann die
Beten auch ungekocht verwenden.
