Salade met balsamico
en vijgen
Salade figues et balsamique
INGREDIËNTEN:
1 komkommer 50 g hazelnoten
30 g basilicumblaadjes 40 g water-
kersblaadjes enkele blaadjes radicchio
een paar blaadjes eikenbladsla 6 vij-
gen (verse of gedroogde)
VOOR DE DRESSING
1,5 el olijfolie 1 el balsamicoazijn
1/4 tl kaneel peper en zout balsa-
micocrème
BEREIDING:
1. Snij 1 komkommer tot slierten en zet
apart. 2. Rooster de hazelnoten in een
droge pan en hak deze nadien grof.
3. Maak de dressing: klop in een kom de
olijfolie, azijn, kaneel en peper en zout
door elkaar. 4. Doe de in grof gesneden
stukken basilicum, de waterkers,
radicchio en de blaadjes sla in een kom
en meng met de dressing. 5. Schik de
sla op de borden en leg de komkommer-
slierten erover. 6. Snij de vijgen over de
lengte in 4 of 6 parten en verdeel deze
over de bordjes. 7. Giet net voor het
opdienen de balsamicocrème over de
salade en serveer met de gehakte hazel-
noten.

1 concombre 50 g de noisettes
30 g de feuilles de basilic 40 g de
feuilles de cresson quelques feuilles de
radicchio quelques feuilles de salade
de feuilles de chêne 6 figues (fraîches
ou sèches)
POUR LA VINAIGRETTE :
1,5 c. à soupe d’huile d’olive 1 c. à soupe
de vinaigre balsamique 1/4 c. à café de
cannelle sel et poivre
crème balsa-
mique
PRÉPARATION :
1. Coupez 1 concombre en spirales et
mettez-le de côté. 2. Faites griller les
noisettes dans une poêle sèche, puis
hachez-les grossièrement. 3. Pour la
vinaigrette, battez l’huile d’olive, le vi-
naigre, la cannelle, le sel et le poivre
dans un bol. 4. Dans un saladier, mettez
le basilic et le cresson ciselés ainsi que
les feuilles de radicchio et de salade et
mélangez le tout avec la vinaigrette.
5. Déposez la salade sur les assiettes
et placez les spirales de concombre
par-dessus. 6. Coupez les figues en 4 ou
en 6 sur la longueur et répartissez-les
sur les assiettes. 7. Juste avant de ser-
vir, versez la crème balsamique sur la
salade et ajoutez les noisettes hachées.
