Bereiding
Bedek de rijstkom met voedingsfolie.
Scheid de eierdooiers.
Roer de boter romig.
Smelt de chocolade au bain-marie
in de stoomkoker en voeg de boter
en de eierdooiers al kloppend toe.
Werk de suiker, het meel en de tot
sneeuw geklopte eiwitten erdoor
en meng voorzichtig.
Doe het deeg in de kom
en stoom gedurende 35’.
Laat afkoelen en haal de taart
uit de vorm.
Serveer met crème anglaise.
Presentatie
Giet een lepel crème anglaise
als een spiegel op het bord.
Zet de zachte taart in het midden erop.
Werk af met chocoladesigaretten
of chocoladeschilfers.
