Para cocción directa
(Utilizando la cámara principal como parrilla al carbón)
Siga las instrucciones de encendido anteriores, pero llene las
bandejas difusoras de la caja de cocción grande con carbón encendido,
acomodado a una altura pareja, y controle la temperatura con las
ventilaciones de entrada y de salida. La mejor opción es utilizar una
chimenea para encender grandes cantidades de carbón. Una vez que
esté encendido, acomode el carbón en las bandejas y vuelva a colocar
las rejillas de cocción utilizando el elevador de rejillas suministrado.
Nota: El carbón produce más calor cuanto más acceso tiene a la
corriente de aire. El dejar la tapa abierta al cocinar producirá un calor
más intenso. El dejar la ventilación interna completamente abierta
permite la mayor circulación de aire dentro de la caja de cocción al
cocinar.

controlar la temperatura regulando la circulación de aire a través de
las ventilaciones de entrada y de salida. Cuanto más abiertos estén
las ventilaciones, circulará más aire a través del carbón. Cuanto más
aire circule por el carbón, más se elevará la temperatura. Pequeños
ajustes en las ventilaciones producirán cambios importantes en la
temperatura de cocción.
