Bananenpfannkuchen
Für 4 Personen
1 Prise Salz
1 Prise Zimtpulver
150 g Mehl (Type 550)
250 ml Ungesüßte Kokosmilch (aus der Dose)
2 EL Honig
2 Bananen
2 Eier
4 TL Erdnussöl
Saft von 1/2 Zitrone
Zubereitungszeit: 40 Min.
Ruhezeit: 30 Min.-1 Std.
Pro Portion ca.: 250 kcal
1. Für die Pfannkuchen Salz, Zimt, Mehl, Kokos-
milch und Honig mit dem Pürierstab zu einem
Teig vermischen und 30 Min. -1 Std. ruhen
lassen.
2. Die Bananen schälen. 1 Banane sehr klein
schneiden und mit den Eiern unter den Teig
mischen. Sollte der Teig zu dick sein, etwas
Mineralwasser untermischen. Die zweite Banane
in Scheiben schneiden und unter den Teig
mischen.
3. Den Backofen zum Warmhalten auf 70°
vorheizen. Zuerst den Wok erhitzen, dann mit Öl
bestreichen. Nacheinander bei mittlerer Hitze 8
Pfannkuchen von beiden Seiten goldbraun
backen. Pfannkuchen im Backofen warm stellen.
Den Wok für jeden Pfannkuchen neu mit Öl
bestreichen. Die Pfannkuchen mit Zitronensaft
beträufeln und servieren.
