Oven-Braised
Beef
6 servings.
Ingredients:
1 kg braising beef , olive oil
150 g bacon, 1 large onion
2 carrots, 1 celery stick
30 ml red wine
30 ml meat stock
1 tablespoon corn flour
salt, pepper, thyme
2 tablespoons double cream
20’ - 25’
Preparation:
2’ Heat the oil in a heavy cast-iron pot over high heat.
4’ Brown the meat on all sides.
4’ Remove the meat from the pan and add the diced vegetables and the bacon.
2’ Leave to dry out for a few minutes.
5’ Return the meat to the pan and add the red wine and stock.
1’ Add salt, pepper, and thyme.
5’ Bring to a boil.
Cover the pot with a lid and stand it on the enameled baking tray.
Cooking method:
(3h 30’)* Select on the display the program “Braised Beef”: the ideal temperature and
cooking time will appear automatically on the display.
Wait for the oven to pre-heat: the display will show you the oven temperature.
Place the tray on second shelf from the bottom of the oven.
Remove the meat from the oven and wrap in aluminum foil.
Dilute the corn flour in a little cold water and use this mixture to thicken the gravy
over medium heat. Add the double cream and season to taste.
Cut the meat into slices, pour the gravy on top and serve at once.
Wine: Best served with a Cabernet.

Baked Exotic
Fruit
6 servings.
Ingredients:
Exotic fruit (eg. pineapple, banana,
kiwi, mango …)
7 egg yolks
150 g castor sugar
100 ml water
vanilla essence
1 small liqueur glass of rum
15'
Preparation:
6’ Pare, cut and arrange the exotic fruit on individual heat-resistant dessert plates.
In a saucepan, bring the water, sugar, and vanilla to the boil.
6’ Put the egg yolks in another saucepan and pour the syrup on top, while stirring the mixture.
Cook over medium heat, stirring continuously, until the mixture thickens (do not allow
to boil).
3’ Remove from heat, add the rum and continue stirring for a few seconds more.
Cooking method:
(1’)* Select on the display the program “Exotic fruits”: the ideal temperature and cooking
time will appear automatically on the display.
It’s not necessary to wait for the oven to pre-heat: the display will show you the oven
temperature.
Place the oven tray on the fourth shelf from the bottom of the oven.
Pour equal amounts of the vanilla sauce on each fruit serving to cover.
Arrange the plates (two at a time) on the rack and bake for about 1 minute, keeping
the oven door shut. Bake until the vanilla sauce is evenly browned on the top (keep
checking as the browning takes very little time). Serve while still hot.
Serving suggestion: put a scoop of vanilla ice-cream on each plate.
Wine: Best served with a Champagne.
